- Provide 1 kg of tripe (ebyenda, in one of the local languages in Uganda).
- You need 4 of well ripe tomatoes.
- Prepare 2 of medium size onions.
- You need 1 of large carrot.
- Take 1 of large green bell pepper.
- Take 2 tbsp of royco.
- You need 2 of medium size aubergine(peeled, they help thicken the soup).

- Put in a cooking pot (I use a pressure cooker, boil for 1 straight hour ( my favourite kitchen gadget 😊).
- Whilst you are cutting your veggies, royco and other spices/ herbs of your choice. add them to your ready tripe, cover and allow to boil once again for 30minutes or more..
- Serve with mashed matooke(like I did), posho (ugali), or whichever accompaniment you prefer 😊..
