- Get 1/2 teaspoon of chopped chives per person.

- First whisk the eggs until light and airy with a little pepper, I add a teaspoon of water to them, but you can omit the water. I put a pan over low heat, I add the egg and gently stir it around until just a little moist. Don't worry as the egg will carry on cooking. In the meantime put 2 slices of the prosciutto in a pan and cook until it starts to crisp a little or put under a grill. Slice the cheese into very thin slices and spread or place on the inside of the croissant. When the prosciutto is cooked and the egg is ready scrambled arrange them on the cheese topped croissant.
