The ingredients needed to cook Ukwa:

  1. You need 9 cups of Ukwa..
  2. Take of Red oil. 1 cooking spoon.
  3. Use of Dry fish. As desired.
  4. Take of Ogiri(igbo locust beans)1.
  5. Prepare 3/4 cup of Crayfish.
  6. You need to taste of Salt.
  7. Provide of Knorr cubes 3.
  8. Provide handful of Bitterleaf (washed)A.
  9. Take 1/2 tsp of Potash.
  10. Use 1/2 cup of Pepper.

Steps to make Ukwa:

  1. Wash the ukwa and boil on the fire for 45mins. (Note) we have dried and fresh ukwa. What i made is the fresh ukwa, so if you're making the dry one, you have to soak over night before cooking. 😁.
  2. Melt the potash and add to the boiling ukwa. Note you will use only the water to avoid adding sand..
  3. When it has boil and almost ready, add your dry fish, crayfish and pepper. Add the season cubes and salt with the Ogiri..
  4. Cover and allow to cook for another 20mins. Add the red oil and bitterleaf and cover to cook for more 15mins or so. And the ukwa is ready to eat. 😋.
