The ingredients needed to prepare Malai kofta:

  1. Prepare 1 cup of cottage cheese/paneer.
  2. Provide 1 of medium boiled potato.
  3. You need 1 tablespoon of all purpose flour.
  4. You need 1 of medium sized onion.
  5. Prepare 2 of large tomatoes.
  6. Use 8 of cashew nuts.
  7. Provide 1 tablespoon of Ginger-garlic powder.
  8. You need 1/2 teaspoon of grated ginger.
  9. Use 1 tablespoon of chopped corriandar leaves.
  10. You need 1 teaspoon of turmeric powder.
  11. You need 1 teaspoon of red chilli powder.
  12. Get 1 teaspoon of corriandar powder.
  13. Take 1/2 teaspoon of cumin powder.
  14. Use 2-4 of green cardamoms.
  15. Use 2-3 of cloves.
  16. Prepare 1 of black cardamom.
  17. Get 7-8 of peppercorns.
  18. Take 1 of bay leaf.
  19. Get 1/2 teaspoon of sahi garam masala.
  20. Use 1 teaspoon of kasoori methi.
  21. Take 2 cups of oil.
  22. Provide 2 tablespoon of heavy cream/ful fat milk.
  23. Take 2 teaspoon of salt.
  24. Prepare 2 teaspoon of sugar.
  25. You need 2 of green chillies.

Instructions to make Malai kofta:

  1. 1st mix cottage cheese,boiled mashed potatoes, coriander leaves,all purpose flour,salt,garam masala powder, 2 tablespoon powdered milk & finely grated ginger together & make medium sized balls out of it..
  2. Then heat oil in a pan & deep fry the kofta balls until golden brown & keep aside..
  3. Now In a saucepan add some water and into the water add diced whole onion, tomatoes & cashews & boil until the onion becomes translucent..
  4. Cool down the mixture a bit & make a smooth paste out of it..
  5. Now in another pan heat up some oil & add whole spices (bay leaf, green cardamoms,black cardamom & clove, peppercorns) & wait untill the aroma comes out from the spices then add 2 green chillies..
  6. Now in that oil add a water mixture of Ginger-garlic paste + cumin powder+ coriander powder + red chilli powder + turmeric powder.Then stir & mix well the spice mixture until the oil separates from it.
  7. Once the spice mixture is done add the tomato-onion paste & incorporate everything together. Then add the salt & sugar & cover the pan & simmer for 10 minutes..
  8. After that if the gravy is too thick add some lukewarm water to it then add heavy cream or full fat milk & simmer for 5 more minutes..
  9. Finally add sahi garam masala & crushed kasuri methi to it & turn off the flame..
  10. Arrange fried Koftas in a serving platter & pour the gravy slowly onto the Koftas. Garnish it with chopped coriander leaves & serve hot with rice or rotis..
