The ingredients needed to prepare Shukto:

  1. Prepare 2 of small uchche/ Bitter Gourd.
  2. Use 2 of small Baigun /Brinjal.
  3. You need 1 of kancha kola/Raw Banana.
  4. Get 2 of small aloo/ potato.
  5. Take 1 of ranga aloo / Sweet potato.
  6. Use 2 of Danta / Drum sticks.
  7. Get 1 of Mooli/ White Radish.
  8. Provide 7 of sheem / Broad Beans.
  9. Provide 10 pieces of Bori.
  10. Provide 2 tbsp of poppy seeds/posto.
  11. You need 1 tbsp of mustard seed / sorso.
  12. Use 1 tbsp of ginger paste.
  13. You need 1 tsp of panch phoron.
  14. Provide 2 tsp of Radhuni.
  15. Provide 1 tsp of turmeric powder.
  16. Use 1 tbsp of sugar.
  17. Provide to taste of Salt.
  18. You need 4 tbsp of Mustard oil.
  19. Use 1 tbsp of ghee.
  20. Prepare 1 cup of Milk.
  21. Take 3 cups of water.
  22. Prepare 2 of nos red chilli.
  23. Use 2 of nos green chilli.

Instructions to make Shukto:

  1. Soak both mustard seeds and puppy seeds in water for ten minutes then make paste. All vegetables cut in rectangular strips, drumsticks into 2" long strips after peeling the outer skin of each veggies except Brinjal, heat mustard oil in a wok and fry Bitter Gourd and keep aside,.
  2. Then fry Bori in medium flame keep aside..
  3. Then fry all the veggie one by one keep it side, temper remaining oil with panch phoron, and Radhuni, red green chilli, add ginger paste and cook for 2 minutes, then add puppy seed and mustard seed paste and cook again for 2 minutes..
  4. Add turmeric powder, salt to taste, sugar again cook for 2 minutes, add all the fried vegetables and bori..
  5. Now add milk, water to the veggie, mix it and bring it to boil then cover the wok with a lid, cook for 10 minutes in low flame,.
  6. Check the water level and if required add some more water since Shukto should have sufficient gravy. Add ghee to the curry and boil for 2 minutes and serve hot with rice..
