- You need 1 of onion sliced.
- Get 2 stick of celery, chooped.
- Provide 1 of pepper, diced.
- Take 1 clove of garlic, crashed.
- You need 130 g of mushrooms, chooped(optional).
- You need 170 g of cheese,grated.
- You need 200 g of wholemeal breadcrums.
- Prepare of Chopped fresh coriander.
- Get of Salt and ground black pepper.
Steps to make Lentil loaf:
- Put the lentils in saucepan and add water and bring to the boil, then reduce the heat and cook for 15-20min..
- Preheat the oven 180c. Prepare 1.2litre loaf tin..
- Heat the oil in a frying pan, add the onion, celery,pepper,garlic and cook for 5min, add mushrooms and cook for next 5min.
- Tip the vegetable into the lentil mixture, then stir in the cheese(leave some for later to put on top), breadcrumbs,coriander.Mix well and season..
- Spoon the mixture into the prep loaf tin and baked for 50min after add the rest of the cheese and bake for next 5-10min. Cool in the tin for 10min before cutting! You can eat warm or cold! Enjoy!.
