  2. Prepare 125 g of green lentils.
  3. You need 2 of onions.
  4. Prepare 1 of apple.
  5. Take 4 tbsp of lime juice.
  6. Prepare 3 of garlic cloves.
  7. Use of Oregano.
  8. Use of Basil.
  9. Use of Salt.
  10. Prepare of Pepper.

  1. Peel and finely chop the onions, apple, ginger, garlic and sweet potato.
  2. Put 2tsp curry powder into large saucepan and toast over a medium heat for 2mins. Add 3tbsp olive oil, stirring as the spice sizzles in the pan.
  3. Add the onions, apple, garlic, ginger, salt, pepper, oregano and basil. Gently cook for 5mins, stirring frequently.
  4. Add sweet potatoes, lentils, vegetable stock, milk and lime juice. Cover and simmer for 20mins.
  5. Remove from heat and blend until smooth.
  6. Return to heat, season to taste, simmer until desired thickness is achieved.
  7. Serve topped with black pepper and parsley.
