The ingredients needed to cook Gwete:

  1. Take 1 Kg of Cow Bones or brisket bones.
  2. Use of Garden eggs (yalo and gauta).
  3. Use of Lots of spinach.
  4. Take of Sorrel leaves, not the flower (yakuwa) a small bunch.
  5. You need of Cabbage 1 medium size.
  6. Use 1 cup of Acha (fonio, hungry rice).
  7. You need 2 of Seasoning cubes (salt is optional).
  8. Use 5 pieces of each Scotch bonnet, hot pepper (tatashe, miango pepper).
  9. Get of Onion 1 large bulb.
  10. Take 2 cups of Carrots (diced).
  11. Prepare 1 cup of raw groundnuts.
  12. Take as needed of Water.

Steps to make Gwete:

  1. Place brisket bones in pot along with some chopped onions, washed groundnuts and cook for 30 minutes. If using salt and stock cubes, you can add these now. These bones are going to cook for about 15 minutes before adding the other ingredients..
  2. While the bones are cooking, dice up your pepper, garden eggs, carrots. Add to the bones..
  3. Pick and wash your sorrel leaves thoroughly. Do the same for the spinach. Cut them into large pieces. Chop your cabbage into small chunks and wash thoroughly with salt..
  4. Wash your Acha thoroughly to remove dust and sand particles. You can buy already washed and packaged Acha in big health stores.
  5. Add your sorrel leaves(yakuwa) to the bone mix, add a cup of water and stir. Leave to boil for 5 minutes.
  6. Add your Acha, stirring briskly to avoid lumps. Use a wooden spatula to ensure it does not stick to the bottom of your pot and burn. Leave uncovered and stir intermittently till it thickens. You can drop in some seeds of miango pepper for those who like it extra spicy..
  7. Add your cabbage and spinach last into the pot, give it a good stir and lower the heat. Let it simmer for another 5 minutes. Add some hot water if its too thick. After 5 minutes, turn off the heat and cover the pot, let it sit for another 5 minutes and its ready.
